Apple~Sausage~Butternut Squash Meal


This is so delicious, I had to share it with you!  I don’t have a “real” recipe because this is so basic, b

ut personally I think “creative cooking” produces some of the best meals! =)

  • 1 butternut squash
  • brown sugar
  • real maple syrup
  • butter
  • 1 pound of turkey or beef breakfast sausage
  • 5-6 baking apples (tart is best)

I use butternut squash, the one that is shaped like a peanut and it’s a very pale yellow, but you could use acorn squash or anything similar.

First slice the squash in half lengthwise and place each half face down in a pan.  I can fit two in a pan if I lay them each opposite of the other.  Then pour water into the pan until it reaches about 1/2 inch and put the pan in a 350º oven for 30 minutes.  Take the squash out and turn it over and fill it with butter, syrup and brown sugar, then put it back in for another 30 minutes.

While the squash is cooking for the last 3o minutes, prepare the sausage and apples.  Cook the sausage in a frying pan and then push it to the side and cook the apples in the sausage grease until they are nice and tender.  Once you get them started, cover them for a while so they can also steam a little bit.

That’s it!  Very simple and the combination of these flavors goes so well together!
