Black beans, Cabbage & Peasant Rib Soup


I was pleasantly surprised at how good this tasted.  It’s soo simple – my kind of meal.  And quite inexpensive too.  I made it on the stove top, but if you start soaking the beans the night before or very early in the morning, it could easily be a crock pot recipe.

The ingredients:

2 cups of black beans

7 cups of water

4 peasant ribs

1/2 head of cabbage

1 small onion

Heat water and beans to boiling.  Boil 2 minutes.  Remove from heat, cover and let stand 1 hour.

Add ribs, and heat to boiling. Reduce heat, cover and simmer.  While that is simmering,  cut up cabbage and onion and add to ribs.

Continue to simmer  for 2-3 hours or until beans are tender.  Trim meat off of ribs, salt to taste and serve.
