Chicken Slaw


This is a delicious and nutritious meal that is very simple to make and very healthy because everything is raw except for the chicken.  My husband and I are on Phase 2 of the South Beach Diet, and this fits nicely.

Chicken Slaw

  • One head of cabbage
  • 2 chicken breasts
  • 3 crisp, tart apples
  • 1-2 avocados
  • 1/2 cup of raw almonds
  • 1 cup of mayonnaise

Shred the cabbage fine, as if for a coleslaw.  Thoroughly cook the chicken breasts and cut into bite size pieces.  Chop the almonds into pieces.  Cut the apples and avocados into bite size pieces.

Put all ingredients into a bowl, add the mayonnaise and mix thoroughly until it is moistened and slightly creamy.  Add salt and pepper to taste.

That’s it!  When you serve it, sprinkle paprika on the top.

Variation:  you could add carrots, cucumber, broccoli, grapes, raisins, green onions and celery to this salad, top it with cashews and it would still be delicious, but it’s great like this!
