If anyone has ideas for Mondays, I would love some suggestions. The idea of posting our menu for the week doesn’t seem very exciting to me.
For today, I will post the Lentil Soup my son made last week, which was quite good. We thought about Jacob and Esau while we were eating it because tradition says that is the meal that was traded for the birthright.
- 8 cups water
- 4 cups tomato juice
- 2 cups lentils
- 6 slices turkey bacon (we didn’t have any, so we used taco burger that was in the fridge)
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup sliced carrots (we also didn’t have any carrots, so we just left these out)
- 3 Tabelspoons parsley
- 1/2 clove garlic, diced
- 2 1/2 teaspoons salt
- 1/2 teaspoon oregano
Add this in the last 30 minutes before serving.
- 15 oz can of tomatoes
- 2 tablespoons vinegar
Begin 3 hours before dinner. Soak the beans for 1 hour and then add all the ingredients (except the last two) and bring to a boil. Turn to a simmer and simmer for a couple of hours. Add the last two ingredients 1/2 hour before dinner.
