Truly Simple and Delicious ~ Broccoli and Cheese Sauce

Thought I would share a quick recipe with you.  I grew up eating this quite often.  It’s very easy to make, doesn’t take long to put together and tastes amazing.


  • Broccoli
  • Potatoes
  • Sharp Cheddar
  • dry or prepared mustard
  • Flour
  • Butter
  • Milk
  • Chipped Beef

I didn’t list amounts, because it’s pretty basic and it depends on how many people you are feeding.

Start by scrubbing the potatoes and slice them for boiling.  If you prefer, you can bake them.  It doesn’t really matter what form they are in, but I wouldn’t recommend french fries. =)

Next, wash the broccoli and steam the entire head until it is bright green and tender.

While the broccoli is steaming, make a basic white sauce.  We do a triple or even a quadriple batch for our family.  When it is nice and thick, add a teaspoon of dry mustard or a tablespoon of prepared mustard and then as much shredded cheddar cheese as you like. (the more, the better) After all the cheese is melted, taste it to see if you need more mustard and then chop the chipped beef into 1×1 inch squares and add to the cheese sauce.

You’re done!  Simply place a/some potato on each plate, top with pieces of broccoli and then drown it all with the cheese sauce and chipped beef.  Mmmh!  My mouth is watering!

PS This cheese sauce is also amazing over eggs on toast.
